I just wanted to post a recipe for your morning oatmeal. If you're like me, oatmeal can be a dreaded disappointment. Even as a child I did not like oatmeal nor the marginally better cream of wheat. I gave my best effort at liking the stuff. I'd add sugar, cinnamon, milk, butter (margarine at the time!) and then more sugar! Nothing helped - until now!
Peppered Curry Oatmeal:
Use slightly less than 1/2 cup of dry oatmeal placed into a standard sized paper dinner bowl. I use a paper bowl for convenience though any microwaveable dinner bowl is acceptable.
Add to this:
1/8 teaspoon of curry powder, I've been using the yellow ground Cari Ni brand found in an Asian grocery. Substitute another brand as you see fit.
A goodly dash of white pepper.
2 strips of dried mango cut into 1/4 inch chunks
2 tablespoons of dried cranberries
Add 2/3 cup of water
Now, just pop the bowl into a microwave oven and cook on high for 2 1/2 minutes.
After cooking stir and let stand for about 3 minutes then stir again. Adjust cooking
time for individual microwave ovens.
Enjoy this breakfast oatmeal as is or treat the recipe as a base into which you add
more ingredients. Ideas for these additions include eggs, bacon pieces, raisins, and
leftover chicken or ham. Experiment with some of these for added variety and you
might be able to consistently add oatmeal to your diet. Do note, additional
ingredients will likely require slightly longer cooking times in the microwave.
This is a convenient breakfast when made with all disposables. A plastic spoon and paper bowl make this a true go food. If the ingredients and their
measurement seems a bit of a hassle then you can have confidence that the preparations will very quickly become done by sight and feel and "measuring" will no longer be necessary.
